Fresh ingredients:
When making nut butters you will have fantastic results if you use fresh
ingredients.
Start with these ingredients to make 3 cups of peanut butter with this
homemade peanut butter recipe:

4 cups of fresh shelled roasted peanuts

1/4 cup sugar

1/3 cup of canola oil

1 teaspoon salt
Hand mills with high quality stainless steel burrs like those on the Wonder Junior Deluxe, make excellent nut
butters, however, the nuts must be FRESH. If even slightly stale, the nuts
will grind into more of a flour than a butter. This is a good way of telling
if the nuts you have purchased are fresh. If the nuts you grind do not produce
a smooth, consistent butter, then purchase fresher nuts.
Peanut Paste
Set your stainless steel burrs to a fine setting by adjusting the milling heads
so that they are close, but not so tight that it is hard to turn the mill. When
milling nuts you should have a smooth paste coming from the mill. Once you
finish the grinding simply add salt, sugar, and canola oil to get the desired
taste and consistency. Stir to peanut butter consistency and it will keep in the
fridge for up to 2 months

Clean up, with a good quality hand mill, is easy. The Wonder Junior Deluxe is completely washable and the heads are easily removed for quick clean up in
your kitchen sink. A little warm water and a few drops of dish soap and your
